Default Fish head ?

Looks like something Conan would eat. Our daughter brought one of these out to us tonight, a big one, salmon .
Niska said honey that's disgusting get that thing out of here. Daughter says it's good mom.
How do you even cook one of these? Nasty.

I go down to the commercial fish house in town and we drink a few beers and eat whitefish cheeks and livers. the cheeks are just fileted off the head. You need a bunch of heads to get a meal though. As to eating the whole head ill leave that to the starving people of the world.

Usually fish heads and skeletons are used for making stock. Some fish like grouper have quite a lot of meat on their heads and I've seen them used whole in soups or roasted. The head is picked apart for its meat, kind of like eating a sheep head. A big salmon head could be used that way too.

You can have my share of them.

I think I'll stick with filets!

BTW is it filet or fillet? It's spelled both ways, so which spelling is proper?

Me too. But I like the idea of using as much of the good meat as possible. With groupers, which have large heads, there are cheeks, and also jaw meat to be had. I've been seeing more of the jaw meat at seafood shops lately. It's good meat. Finger food. Reminds me a lot of the old days when chicken wings were not that popular, and they were cheap. They're not cheap anymore because people learned to turn them into a delicacy. (When my kids were 10 to 15 years old, I don't think there was a limit to the number of teriyaki chicken wings I could make. If I made 10 wings, they'd eat them all. If I made 20 wings. They'd eat them all. For a while, I was cooking up one of those big supermarket tray packs of chicken wings, and they'd eat them all.)

I caught one of these monkfish once. A small one. I was afraid to handle the thing. How's that for a head, though....?

This thing is almost the size of a football. How do you cook one of these? I'm thinking the outdoor grill is a no go. Our daughters husband is an Asian, his mother was who sent it to us to try. Might need to call her and ask.
Our daughter Aleasha says she likes them and the eyes are really good " barf".
