I've eaten in one joint that had authentic mexican food. It came highly recommended by the locals. It was bland as oatmeal. Never returned to the place. Gimme tex-mex with some FLAVOR. I agree with the pastor. Of NM, TX, and AZ mexican food I'll take NM. You will find a difference between northern NM and southern NM varieties. The northern tends to run milded than the southern version. I haven't eaten there in years but there was a joint Las Vegas, NM that had a sign on the checkout desk that said "our food is HOT, ask your server for a sample before you order". They weren't lying either, it was as hot as anything I've run across in the south but it was gooood.
Now back to the OP. I've never encountered fish and chips on any menu but I'm not widely traveled. Catfish rolled in cornmeal with french fries and hush puppies along with a cold beer does me nicely. There is a joint in Buffalo Gap, TX that does this up very well.
