I never tried possum, something that will mess his own nest doesn't sound tasty. Beavers and porky-pines were on the Lewis and Clark menu but I've yet to try them. I had musk rat at a wild game feed once I passed on seconds.

Haven't had it for a long time, but grew up eating young coons. (taken out of season)
Mom baked them and it was the most tender meat I've eaten.
Similar to chicken thighs.
When I trapped in the winter, I sold my coons to a hermit who stretched the skin and ate the coon.

supposedly allegedly the proper way to make coons
and possums fit to eat is to catch 'em live and feed
'em only corn for a week or two and that's supposed
to get the funk taste out of them. so the old men usta say

Coons are not as likely to eat carrion as a possum will.
Especially in summer when they can get sea-food, veggies, eggs, etc.
That's why we killed young coons out of season.

Theres nuthin like walking up on a week old dead cow, or deer, and watch a possum waddle out of the stomach to wet the appetite for baked possum. Yum Yum!🙊🤮

Maybe the coon up here taste better because corn is their main diet from mid-summer till hunting season starts. I'll pass on possum.
