Default Foo foo cheese

Wifey got some fancy cheese for a smorgasbord at home when we were having company. Expensive stuff. Aged. Fancy.

And you know what, not as good as the cheap stuff we usually get, like a $2.50 block of cheddar or Wisconsin "Gouda" that we pay full price for unless it's on one of its frequent 2 for 1 sales.

My family likes the sharpest cheddar cheese we can buy. But lately I’ve been buying, in addition to the seriously sharp cheddar, cheddar cheese with hot peppers in it. Sams club has one I like. It’s a small wheel of cheese. And I buy a three pepper cheese at Publix, it’s boars head brand.

My father in law was consertive as were most people I knew growing up that survived the Great Depression. He bought the cheapest cheddar cheese and put it on a Woden stand under a glass cover. When it had molded suficently he would trim off the mould and it was sharp.

He had been raised in the Sandhills of Nebraska as a seventh Day Adventist. Although he had converted to Sunday worship he never changed his diet. Every Saturday he cooked a huge pot of dried beans. When I would bring his daughter home after our date she would go to bed but I would sit in the kitchen with her father eating beans and listening to his stories about growing up in a sod house on the western plains.
