As a fur buyer, I want all grey fox turned fur out. This allows me to see the quality of the fur, undercoat, and coloration. If someone brings me grey fox turned fur in, I automatically suspect something wrong with the fur.
NAFA also recommends fur out on fox. I first board for about a day (until the head is almost dry) with the fur in and then take off the board and turn and put back on the board with fur out.
