How do you prepare brine fish???

This time of year, all of our local fruit markets have buckets of brine fish. I remember both of my grandfathers being quite fond of them, but at the time too young to think much about it. Now both Grandmothers are gone, and neither mother nor dad remember how they were fixed other than you have to soak them.

Any help out there???
