Fried Rabbit

2 rabbits,cut in serving pieces
lemon juice
salt and pepper
1/2 teaspoon dried oregano
4 tablespoons milk
2 eggs, lightly beaten
1/2 cup flour
1/2 cup fine bread crumbs
peanut oil

Put rabbit pieces in water to cover with a little lemon juice(half a lemon) and parboil for 10 minutes. Drain, pat dry, and sprinkle with salt, pepper and oregano. Combine milk and eggs. Dip rabbit in flour, then in egg mixture and then into the bread crumbs. Heat 1/2 inch of oil in large skillet till a cube of bread turns golden in 1 minute. Brown rabbit on all sides. Lower heat and cook till tender (about 20 minutes). Drain and serve at once. Serves 4-6.
