Since it will be Thanksgiving soon I thought I would posted a turkey recipe.

Early American Roast Turkey

1 turkey(8-10 pounds)
Salt and pepper
1/2 pound sausage meat
1/2 cup finely chopped onion
1 cup finely chopped celery
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon crushed thyme
1/4 teaspoon chervil
1/4 cup chopped parsley
1 cup cooked chestnuts, chopped coarsely
8 cups bread crumbs made from day-old bread
8 thick slices bacon
1/2 cup melted bacon fat

Rinse and dry turkey inside and out. Sprinkle cavity and all surfaces with
salt, pepper. Cook sausage until thoroughly done; then add the onion and
celery, cooking until transparent. Add salt, pepper, thyme, chervil, and
parsley. Add chestnuts, toss in bread crumbs and mix. Fill neck and body with the stuffing. Close cavities with skewers or sew up. Place turkey on rack in roasting pan, breast side up. Pull legs up and tie together with string. Turn wings under. Cover breast with bacon slices and ends of legs with foil. Soak a piece of cheesecloth in the melted bacon fat and place over bacon-covered breast. Roast breast side up at 325 degress F. for 20-25 minutes per pound or until done to taste. Baste constantly with fat and pan drippings. Serves 8-10.

Not exactly. We beez having smoked turkey that I'll be smoking most likely on Wednesday before Thanksgiving but maybe on Tuesday.

Now iffen yew er Bobby wantz me ta smoke sum meat fer yawl ya best be a gittin it over heah afore then so's I'll have it when I far up the smoker.

Lunch is usually about 2PM round heah.
