It'll be a shooter!

I've never come across an inaccurate Weihrauch, There's something gorgeous about the function and form of target rifles,

Unfortunately Sir, you just started the first step down the accuracy rabbit hole, I'd try RWS ammo (if you can source it on your side of the pond)

If you're considering prone, I'd recommend a set of Anschutz or Gehmann sights although they are not cheap!

You cant go wrong with SK I use STD + as my base ammo at 25 yards it shoots perfectly with my Anschutz

Surprisingly enough CCI std works pretty well too, although feeding my Annie with such ammo is a little akin to giving a aristocrat a can of fortified wine as opposed to a Don Perignon!

I'd avoid any of the newer made Eley apart from Tennex

Will any Anschutz rear sight work on this rifle or is there a specific sight I should look for? Thank you.
Yes I'm almost certain it will fit, Anschutz use 11m rails, might be an idea to double check when your 660 arrives ,

I know that most target rifles use 11mm dovetails as my ex had an Anschutz sight on her Walther.

I always remember the rule given to me by a wise old chap, when adjusting Anschutz sights, L.C.D = left, clockwise, down.

Anschutz are the same, to remove the bolt you may need to lower or partially remove the cheek piece thankfully mine is so old fashioned it lacks any adjustment except for the handstop and but spacers

I'm 100% sure it'll be a good shooter, shoot it as is.

(If you happen to have one) It might be worth running a bore scope up the barrel to check for leading, or the dreaded carbon ring around the chamber,

Actually carbon rings are not that bad and quite easy to remove.
